German chemist who mainly researched cellulose, polymers, flour and protein chemistry.

The scientific historian Mark Walker characterizes Hess as a fanatical national socialist. He was an "adversary" of the Jewish collaborator Lise Meitner at the KWI for chemistry, and after the Anschluss of Austria, he denounced Meitner in 1938. Hess joined the NSDAP (Nazi Party) in 1940.

He died on 8 April 1961 in Immenstadt, aged 72.
