Biography

French master chef, the "Alsatian Bocuse," a two-star winner in the Michelin guide which quotes the best chefs. He transformed his old quarter-bar, opened by his grandfather in 1885, into a gastronomical temple.

Schillinger was engaging, warm, frank and sometimes blunt, a stickler for quality and for his principles, always aiming for improvement and perfection.

He was sleeping in his room in the back of the restaurant the night of 12/27/1995 when unknown persons set fire to the building. It was greatly damaged and Schillinger died of smoke inhalation.
